Milk Rice

Milk Rice
Super easy to prepare, always a success! And tastes sweet without adding any sugar.

Ingredients (4 portions)

  • 150 g "Milchreis" ("milk-rice": a round grain rice such as "Camolino", if not available use "Arborio Risotto Rice")
  • 750 ml milk

This is the basic recipe, very simple.


Bring the milk to a boil, pour in the rice and stir.

Let it simmer at lowest possible flame, closed lid, for about 30 min while once in a while stirring it.


In winter I like to add one star anise and one cardamon seed and cinnamon stick.

Or adding a tsp of bourbon vanilla.

In summer add freshly grated lemon peal (use lemon with untreated peal, organic).

To Sweeten:

Add a handful of raisins or chopped dates while cooking.


Let it cool out a bit, serve with a fruit compote to add sweetness.

Or, pour it into small pudding forms and let it cool out, keep refrigerated for about 3 hours and you have rice pudding.

Plum Compote

Also very easy and straight forward:

Simmer plums, washed and cut in half, with some cinnamon powder, lid on the pot and just a tiny bit of water added to prevent it from browning on the bottom of the pan, on lowest flame for about 15 min. Stir ones in a while. No sugar or sweetener needed since plums are sweet by nature and cinnamon adds a flavor of sweetness….
