Spargel mit Kratzete – White Asparagus with "scratched crepes" is a typical meal served in south of Germany in spring time.

Ingredients (4 portions)

  • 150 g flour
  • 375 ml milk
  • 4 eggs
  • 1 pinch of salt
  • butter for frying

Mix the flour with the milk and salt, add the eggs, mix it all well to a smooth crepes dough.

Let the dough rest for 30min to 1 hour.

Preparation

in a frying pan melt some butter, pour in some of the crepes dough to cover the pan evenly, don't pour too much, the crepes has to be nicely thin. After one side is golden turn it over and now tear it apart into pieces (that's where the name "Kratzete" comes from, "kratzen" means to scratch.) Let it get fried till some parts are nicely crisp.

This is a traditional meal that gets served in south of Germany during the spring time when the local white asparagus gets harvested and served in all the farmers restaurants accompanied with a glass of local white wine and not to forget the mayonnaise. Honestly, due to this culinary highlight, this is one of the most wonderful times of the year in this area of South Germany!
