Green Pea Soup
Ingredients:
- leak (one bunch)
- 2 cloves of garlic, chopped
- green peas (one package, 1LB)
- water
Spice With:
- 3 cloves
- nutmeg
- 3 bay leaves
- 1/2 inch ginger (finely minced)
- salt
- pepper or chili
Preparation:
Wash and finely chop the leaks, including the dark green parts
Simmer the leak with the garlic in a little bit of olive oil, stirring
Add the spices and the green peas
Add enough water (covering all ingredients well, at least 1 inch water above the ingredients!)
When peas are soft, use a blender to puree to a smooth soup, after having removed the bay leaves and cloves if you can spot them.
Tip: to wash leaks fast, cut the long side in half, that allows you to remove any dirt with ease.
Ginger is best when used fresh and chopped small
Tip: I usually cook this soup in the pressure cooker, then it only takes me about 20 min. to prepare and having it ready to serve.
Serving: Grate some cheese on each plate of soup, that looks nice and makes the meal more rich. Serve as a full meal with rye bread and butter and various cheeses and a salad.
