Pumpkin Soup

Pumpkin Soup is really yummy.

Ingredients:

  • pumpkin (one small orange cooking pumpkin: Hokkaido, Uchiki Kuri or also called “red kuri squash” )
  • 2 potatoes (chunks)
  • 1 onion (chunks)
  • 2 cloves garlic
  • water

Chop the pumpkin in about 1 square inch chunks and remove the seeds; the “red kuri squash” does not need to be pealed, that makes it all easy!

Spice With:

  • 1 cinnamon stick
  • 2-3 cloves
  • 1 pinch nutmeg
  • star anise (optional)
  • 2 bay leaves
  • 1-2 tbs curry
  • 1 inch fresh ginger, very fine chopped
  • salt
  • pepper or chili
  • Worcester sauce

Put the chunks of pumpkin, potatoes and  onion in a cooking pot (or pressure cooker), add enough water and the spices and cook till the chunks are soft.

Remove the bay leaves and cloves and blend it to a soup (Tip: use a hand blender)

Tip: Add some spoons of sour cream before serving
