Pumpkin Soup
Ingredients:
- pumpkin (one small orange cooking pumpkin: Hokkaido, Uchiki Kuri or also called “red kuri squash” )
- 2 potatoes (chunks)
- 1 onion (chunks)
- 2 cloves garlic
- water
Chop the pumpkin in about 1 square inch chunks and remove the seeds; the “red kuri squash” does not need to be pealed, that makes it all easy!
Spice With:
- 1 cinnamon stick
- 2-3 cloves
- 1 pinch nutmeg
- star anise (optional)
- 2 bay leaves
- 1-2 tbs curry
- 1 inch fresh ginger, very fine chopped
- salt
- pepper or chili
- Worcester sauce
Put the chunks of pumpkin, potatoes and onion in a cooking pot (or pressure cooker), add enough water and the spices and cook till the chunks are soft.
Remove the bay leaves and cloves and blend it to a soup (Tip: use a hand blender)
Tip: Add some spoons of sour cream before serving
